Sweet Peaches Summer Salad

Summer has finally hit me! I just finished my dietetic internship and now I have (what feels) like all the time in the world to create yummy recipes and finally get back on my recipe redux posts! For this month's Recipe Redux, I was ready to take on some of my favorite ingredients. The theme being "Peaches, plums, nectarines, apricots: we love them all! And they are at their peak season now in summer. So show us your favorite healthy recipe celebrating stone fruits", I knew a delicious and colorful sweet and savory summer salad would hit the spot!

This recipe is simple and only needs 5 awesome ingredients

Sweet and Savory Summer Salad

Ingredients:

  • 4 peaches, pitted and diced
  • 10 heirloom tomatoes, cut in half
  • 1 small seedless watermelon, scooped into pieces or chopped
  • 1/2 cup mozzarella pearls (about 10-12)
  • balsamic glaze (homemade or store bought)

Directions:

  1. Combine all ingredients in a large bowl, mix well. Pour on a large serving platter. Top with balsamic glaze and serve chilled.

For homemade glaze:

  • 1/2 cup balsamic vinegar
  • 3 tablespoons honey or brown sugar

Directions:

  1. Add balsamic vinegar and honey (or sugar) in a small saucepan set over medium heat.  Reduce the heat to medium-low heat once the mixture begins to bubble. Simmer until reduced by half, for about 10 minutes. Remove from the heat and set aside to cool before serving.

Chocolate Fruit "Squares"

I love summer fruits and veggies!

With this month's Recipe Redux theme being "Get Your Fruits and Veggies in Shape", I knew exactly what I wanted to make! Summer= produce galore... and now is a great time to enjoy lots of fruits and vegetables. So Recipe Redux wanted us to show how we serve bounty of gardens and orchards in shapes like ribbons, noodles, cut-outs, or other creative cuts. 

What did I choose to make? Something trendy and colorful, of course!

Instead of making a normal fruit salad, why not make your fruit a work of art?! I enjoyed putting each square piece of fruit together to create a gorgeous fruit design! The great thing about this recipe is that all of the ingredients may already be in your kitchen... which moves this recipe to the top of my list.

Simple and delicious.

I added a blueberry into the bunch to give it a more abstract look. :)

Chocolate Fruit "Squares"

Makes 4-6 servings

Ingredients: 

  • 1 orange, peeled and diced
  • 2 strawberries, stemmed and diced
  • 1 kiwi, skinned and diced
  • 4-6 blueberries
  • 1 mango, diced
  • 1/2 cup dark chocolate chips, melted
  • 1 teaspoon coconut oil

Directions: 

  1. Microwave chocolate chips and coconut oil in microwave safe bowl, for about 2 minutes, stirring every 30 seconds. 
  2. On a plate, thinly spread 1 tablespoon of melted dark chocolate into a square shape for the background.
  3. Take one square of each fruit and place on top of chocolate. Repeat until square/rectangle shape forms on plate (4x4 or 3x4 pieces of fruit or more!). 
  4. Serve immediately. Enjoy a taste of dark chocolate with fruit in eat bite! 

Your sweet tooth will definitely be satisfied.

Frozen Layered Cake with Cookie Crumbs

Is it summer yet? It sure feels like it with this warm weather and the many schools going out of session this week (CONGRATS to those graduating!). So in the spirits of summer ALMOST being here, I decided to celebrate with a nice, cold, refreshing dessert! Now this combination was my mom's favorite but I feel like you could make this dessert with any random flavors you like such as raspberry or mango... but we will save that for next time! ;) 

I used strawberry, chocolate and vanilla (YAY NEAPOLITAN FLAVORS!) frozen yogurt and made a delicious frozen layered cake topped with cookie crumbs! It is light, delicious and is sweet enough to satisfy your dessert cravings. Not to mention, it is simple to make and perfect for an occasion!

What's your favorite frozen yogurt flavor? 

Frozen Layered Cake with Cookie Crumbs

Yield: 12 servings

Ingredients:

  • 1 pint vanilla frozen yogurt
  • 1 pint strawberry frozen yogurt
  • 1 pint chocolate frozen yogurt 
  • 1/2 cup strawberries, stemmed and sliced
  • 1/2 cup cookie crumbs (pick your favorite cookies)

Directions:

  1. Pull frozen yogurt from freezer and let soften at room temperature for 10-15 minutes. 
  2. In a prepared 8x8 inch pan, spoon the first layer of frozen yogurt. Smooth out layer, evenly distributing it in pan. Add next flavor and smooth out evenly.
  3. Add sliced strawberries on second layer. Pour third flavor on top and smooth out evenly. 
  4. Cover dessert with cookie crumbs and place back in freezer for an hour, to refreeze.
  5. Take out of freezer and cut into squares. Enjoy immediately!
