Kale: The Super Food

Growing in popularity, kale has been named the ultimate super food. Instead of making a salad with lettuce or spring mix, try making a dark leafy green salad with some fresh kale leaves. The health benefits and fabulous taste will have you eating more kale each day! Reasons why I love kale: 

  1. Great source of Vitamin A, Vitamin C, and Vitamin K
  2. Antioxidants: helps reduce the risk of cancer and cardiovascular disease.
  3. Iron
  4. Fiber

Try this delicious Kale Caesar Salad:

Ingredients:

  • Kale leaves
  • Cherry Tomatoes
  • Croutons
  • Caesar dressing
  • Parmesan cheese

If desired, add some bacon bits.

Directions:

  1. Wash kale leaves and cherry tomatoes
  2. Combine kale, tomatoes, croutons, and dressing
  3. Mix all ingredients in large bowl
  4. Sprinkle Parmesan cheese on top and enjoy!
