Pannu-Kakku: The Finnish Pancake

Pannu-Kakku-- an oven baked pancake.

I grew up eating Pannu-Kakku with my family. My grandmother is 100% Finnish and has made this oven baked pancake for many special holiday brunches. I thought it would be a perfect treat to share this recipe so you can enjoy some of the Finnish culture and delicious food. This oven baked pancake has a texture of a pancake and a custard. YUM!

Pannu-Kakku is perfect to eat with maple syrup, jam, powdered sugar or even by itself!



  • 4 eggs
  • 1 ½ cups flour
  • 1 teaspoon salt
  • 1 ½ cups 2% milk
  • 2 tablespoons sugar
  • 6 tablespoons melted butter


  1. Preheat oven to 400°F.
  2. In a large bowl, mix together eggs and milk.
  3. Sift dry ingredients separately and add to egg-milk mixture, stir until blended.
  4. Pour melted butter in four 9-inch round pie or cake tins, spread evenly. Pour batter into tins and bake for 15-20 minutes, or until puffy and golden brown. Remove carefully from pan and serve immediately with powdered sugar or maple syrup.

Note: It is very important that the oven is HOT so the pancakes bake evenly and nicely.
