Funfetti Cake Cookies

What's your favorite dessert? Is it a piece of cake or a delectable cookie? If you can't make up your mind between these two, why not combine them and satisfy your sweet tooth!  I couldn't stop myself from eating the whole batch of these funfetti cake cookies. They were soft, sweet, colorful and made just in time for Valentine's Day! My roommate and I had a fun time decorating these cookies and I hope you do too.

Funfetti Cake Cookies

Ingredients:

  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1 cup sugar
  • 2 eggs
  • 1/4 cup low-fat vanilla yogurt
  • 2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 2 tablespoons rainbow sprinkles

For cream cheese frosting

  • 1 (8-ounce) Neufchâtel cream cheese
  • 1/4 cup butter, softened
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar

Directions:

  1. Preheat oven to 350. 
  2. In a large mixing bowl mix butter, vanilla extract, and sugar until fluffy.
  3. Stir in the eggs and yogurt until evenly combined.
  4. Stir in the flour, baking powder and sprinkles.
  5. Drop tablespoons of the mixture onto a greased baking sheet.
  6. Bake for 8-10 minutes, until golden brown. Let cool.
  7. For frosting: In a large bowl beat Neufchâtel cream cheese, butter and vanilla, until blended. Add powdered sugar gradually and blend well. 
  8. Put cream cheese frosting into a piping bag and drizzle over cake cookies. Top with sprinkles and enjoy!
