Happy Fourth of July!

Happy Fourth of July everyone! I hope everyone is having a wonderful, fun and RED, WHITE and BLUE inspired weekend. I was excited to make three quick and delicious desserts for Fourth of July weekend, however, I was really short on time! I have to work all weekend so I thought I would share some recipes on the blog that anyone can make with little to no time before they head out to their fourth of July celebration. Here are three recipes that I find sweet, delicious and perfect for the Fourth of July/hot summer weekend.

 

White Chocolate Dipped Waffle Fruit Bowl

Ingredients:

  • 1 cup white chocolate chips
  • 4 waffle bowls
  • 1 16-ounce container fresh strawberries, washed, stemmed and sliced
  • 1 8-ounce container fresh blueberries, washed
  • Optional: Top with vanilla bean ice cream or plain frozen yogurt or whipped cream

Directions:

  1. Pour white chocolate chips in a microwave safe medium size bowl and microwave chocolate for 2 minutes, stirring every 30 seconds. Add a tablespoon of water to get a chocolate sauce texture.
  2. Dip waffle cones into white chocolate until edges are covered.
  3. Place dipped waffle bowls on a piece of foil or parchment paper and refrigerate for 10 minutes.
  4. Place white chocolate dipped waffle bowls on a tray and fill with strawberries and blueberries. Top with ice cream or whipped cream and enjoy!

Red, White and Blue Pudding Parfait

Ingredients:

  • 1 5.1-ounce vanilla pudding packages
  • 1 8-ounce container fresh blueberries, washed
  • 1 8-ounce container fresh raspberries, washed

Directions:

  1. For pudding: Follow directions on package.
  2. In a small disposable cup, layer blueberries, vanilla pudding and raspberries. Repeat until cup is full.
  3. Repeat for all cups and refrigerate for 30 minutes. Serve chilled and enjoy!

Fruit and Brownie Bowl

Ingredients:

For brownies:

  • 3/4 cup coconut oil
  • 1 1/2 cups sugar
  • 1 tsp vanilla extract
  • 3 eggs
  • 3/4 cup flour
  • 1/3 cup cocoa powder
  • 1 tsp tsp baking powder
  • 1/4 tsp salt

Other ingredients:

  • 2 large bananas, sliced
  • 1 cup grapes, washed and stemmed
  • Whipped cream

Directions:

For brownies.

  1. Preheat oven to 350 degrees.
  2. In a large bowl, mix together the oil, sugar and vanilla extract.
  3. Add eggs and mix until well combined.
  4. Combine flour, cocoa powder, baking powder and salt. Add to the egg mixture until well combined.
  5. In a grease a 9x9 square baking pan, pour the batter and spread evenly.
  6. Bake for 25-30 minutes, or until a toothpick comes out clean. Let brownies cool before serving.
  7. Place a couple brownies in a bowl and top with banana slices, grapes and top with whipped cream. Enjoy!
