Chocolate Chip Cookie & Sorbet Sandwiches

It's FRIYAY and I had a lot going on the past two weeks. Started grad school (YAY), bought my books, got my student necessities (ID, parking permits, maps, school gear, etc.), got my new work schedule AND managed to go bridesmaid dress shopping with my future sister-in-law! Busy weeks indeed. 

In celebration of completing my first two weeks of school, I made these delicious chocolate chip cookie & strawberry sorbet sandwiches. I know these aren't the healthiest but I like to satisfy my sweet tooth to the max sometimes! However, I did try to reduce some sugar/fat/calorie content by replacing some butter with applesauce in the batch of cookies. I also used dark chocolate chips and snuck in some flax seeds into the dough. (hehehe, YUM). And instead of using ice cream, I substituted for an all fruit strawberry sorbet. 

I like to think I tried to make a healthier version of an ice cream sandwich, but it's Friday and here's a Chocolate Chip Cookie Sorbet Sandwich to celebrate my efforts! :)

Chocolate Chip Cookies

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 tablespoon chia seeds
  • 1 tablespoon flax seeds
  • 1/2 cup sugar
  • 6 tablespoons unsalted butter, softened
  • 3/4 cup unsweetened Applesauce
  • 1/2 cup dark chocolate chips

Directions:

  1. Combine the flour, baking powder, baking soda, salt, cinnamon, chia and flax seed in a bowl. Set aside.

  2. In a mixing bowl, cream the sugar and butter until well-mixed. Beat in the applesauce.

  3. Stir in the flour mixture, mix well. Fold in the dark chocolate chips.

  4. Refrigerate dough for 1 hour.

  5. Preheat the oven to 375F. 

  6. On a prepared baking sheet, drop cookie dough, about 2 inches apart. 

  7. Bake for about 10-12 minutes or until golden brown. Remove from oven and cool completely. Eat a few then let's make some sorbet cookie sandwiches!

To assemble sorbet cookie sandwiches:

  1.  With softened sorbet, use a ice cream scoop and scoop sorbet onto one cookie. With another cookie, carefully smash sorbet down to make a sandwich. Place in freezer for 5-8 minutes, until sorbet is hardened and enjoy immediately.
