BBQ Turkey Sloppy Joes

I'm getting ready for SuperBowl Sunday and I am making these bad boys! BBQ Turkey Sloppy Joes are not only THEE BEST game time food, but everyone will love it! The flavor, the simplicity (in preparing it) and the filling-ness of a big meal!

Perfect for half time or after the big game.

BBQ Turkey Sloppy Joes

Yield: 8-10 servings

Ingredients:

  • 1 lb. ground turkey, lean
  • Extra Virgin Olive Oil
  • 1 medium onion, diced
  • 1 tablespoon garlic, minced
  • 3/4 cup BBQ sauce (your favorite kind)
  • 1/4 cup ketchup
  • 1 tablespoon mustard
  • 1 tablespoon light brown sugar
  • 1 tablespoon garlic powder
  • 1 teaspoon onion powder
  • salt and pepper, to taste

For Coleslaw:

  • 1 head of red cabbage, diced
  • 1 green bell pepper, seeded and diced
  • 1/4 cup light mayonnaise
  • 4 tablespoons wine vinegar
  • 4 tablespoons Extra Virgin Olive Oil
  • 1 tablespoon light brown sugar
  • salt and pepper, to taste
  • 8-10 Hamburger buns

Directions:

  1. In a sauce pan, combine ground turkey, olive oil, onion and minced garlic. Cook until turkey is cooked completely.
  2. Add BBQ sauce, ketchup, mustard and brown sugar. Mix well. Add in garlic powder, onion powder, salt and pepper and stir. Let turkey simmer for 5-8 minutes, to absorb the amazing sauce flavor.
  3. While meat simmers, prepare the coleslaw. In a large bowl combine diced purple cabbage, green bell pepper, mayonnaise, wine vinegar, olive oil, brown sugar, salt and pepper, and mix well. Add more sugar for sweetness or more win vinegar for tang!
  4.  With toasted buns, add cooked BBQ Turkey Sloppy Joes mixture to bun and top with coleslaw. Enjoy immediately and enjoy the game!
