Pumpkin Cinnamon Roll Mug Cake

Today I made my first mugcake-- And it's a special one because it is inspired by Erin Palinski-Wade 's original Cinnamon Roll Mug Cake with Cream Cheese Frosting recipe. This recipe is soo simple, delicious and somewhat healthy!

However, I did modify the recipe a little due to limited ingredients and added some pumpkin inspiration. Because it's pumpkin season, people!

I made a Pumpkin Cinnamon Roll Mug Cake with a Cinnamon Sugar Yogurt Spread and I added some hemp hearts to the mix as well as some #regulargirl prebiotic fiber and probitotic blend. .
Thank you Erin for a great recipe and inspiration to try something new!

This treat is low calorie, less fat and perfect for fall!

Recipe adapted from www.erinpalinski.com

  • ¼ cup whole wheat flour
  • 2 tablespoons rolled oats
  • ¼ teaspoon baking powder
  • 1 teaspoon cinnamon
  • pinch of salt
  • 1 teaspoon Splenda (1 packet) or granulated sugar
  • 1/2 banana, mashed
  • 1 tablespoon pumpin puree
  • 1/3 cup non-fat plain Greek yogurt

  • 1/4 cup skim milk
  • 2 tablespoons powdered sugar
  • 2 tablespoons cinnamon

  • 1/4 cup non-fat plain Greek yogurt
  • 1 tablespoon cinnamon
  • 1 teaspoon Splenda (1 packet) or granulated sugar

  1. Spray a large mug (or two small mugs) with non-stick cooking spray.
  2. In a small bowl, mix together flour, rolled oats, baking powder, cinnamon, salt, and Splenda. Add in mashed banana, pumpkin puree and yogurt to form dough.
  3. In a separate bowl, combine milk, powdered sugar and cinnamon. Set aside.
  4. Place ½ of dough into the prepared mug. Pour ½ of cinnamon sugar milk filling and then add remaining dough. Cover with the remaining filling.
  5. Microwave on high for 60-90 seconds or until cooked throughout.
  6. While mug cake is baking, mix together Greek yogurt, cinnamon and sugar in a small bowl.
  7. Remove mugcake from microwave. With a knife, carefully cut a swirl into the cooked mugcake -- like a cinnamon roll. Carefully remove cinnamon roll from mug or top with icing and enjoy right out of the mug! Top cinnamon roll with icing when warm.
